Catalan Cuisine
Spanish cuisine, with ages of tradition and excellent quality produce has always been a source of inspiration for the chefs worldwide. It has been over the last decades, however, that the cuisine of the Northern part of Spain – Catalonia, has revolutionized the world by applying new techniques to traditional Mediterranean dishes and products without disguising the taste of the fresh product.
Nowadays, Catalonia is an international culinary reference. Food lovers from around the world come to enjoy the dishes made by three-star Catalan chefs Ferran Adriá in Roses, Santi Santamaria in Sant Celoni or Carmen Ruscalleda in Sant Pol. Other Catalan chefs, as Joan Roca in Girona or Angel Pascual at his Barceloneta market Lluçanes have also been working hard to raise Catalan cuisine past its already superb level. Anywhere you go, you will experience the national fewer for quality cuisine. What all our chefs have in common is their respect to the product - they promote local fresh seasonal products of highest quality, abound at our markets or many times organically grown in their own gardens.
A visit to any market across Catalonia will reveal you a precious selection of indigenous produce showcasing a splendid variety of food that varies with each season of the year.
In winter and early spring you can find sea urchins from Palafrugell, stalls starting to stock delicious spring mushrooms such as Chantrelle, Bleeding Milkcap and Porcini. Late spring and summer bring many other gustatory pleasures including the highest quality hooked bluefish, herbs and rice. Autumn’s harvests bring tasty potatoes from Prades, the freshly pressed olive oil from Siurana and a variety of specialty mushrooms like Caesar’s mushrooms, Hedgehog Mushrooms, Black Trumpets and, of course, Vic truffles.
Year-round the local markets overflow with Iberian Ham, incredible red prawns from Palamós, anchovies from L’Escala, snails from Lleida and hundreds of other local delicacies waiting for you to taste them.
There are unlimited possibilities for traveling around Catalonia and learning about its leading products, most traditional dishes and most emblematic gastronomic museums. From the fish markets on the Costa Brava, craft cheese dairies of the Pyrenees, the calçot fields of Valls to the small embotits (sausages) shops of Osona, there is a whole culinary world to discover.
