It has been over the last decades, however, that the cuisine of the Northern part of Spain – Catalonia, has revolutionized the world by applying new techniques to traditional Mediterranean dishes and products without disguising the taste of the fresh product.
Nowadays, Catalonia is an international culinary reference. Food lovers from around the world come to enjoy the dishes made by three-star Catalan chefs Ferran Adriá in Roses, Santi Santamaria in Sant Celoni or Carmen Ruscalleda in Sant Pol. Other Catalan chefs, as Joan Roca in Girona or Angel Pascual at his Barceloneta market Lluçanes have also been working hard to raise Catalan cuisine past its already superb level.
